Why does a plant still need an operator on shift?
Switching a line over from one product to another — different dough, different mold, different settings — still needs someone who understands the equipment to reset it correctly, since a changeover is exactly the kind of one-off adjustment automation handles poorly. Clearing a jam before it backs up an entire run, and washing down equipment between batches to the standard food safety requires, also still need hands on the machine, not just a camera watching it.
How should a plant operator prepare for more automated lines?
Getting fast and confident at changeovers — the actual mechanical reset between products — is worth more now than watching for bake defects, since cameras already do that part. It's also worth cross-training on multiple machine types on the line, since an operator who can jump between the oven, the moulder and the packing station is harder to replace than someone who only runs one station.
